    Description

    Smoothies are a great way to kick start your day as they are full of energy and nutrients. Let’s say I am absolutely obsessed with them and have one everyone. Here below I have listed 7 of my favourites to keep you going for the week!

    Classic Mango, Apple & Banana

    Serves: 1

    Ingredients:
    1 Apple
    1 Banana
    Half cup of chopped frozen mangoes
    1 tsp flaxseed
    Oat milk (I use Oatly)

    Blend all the ingredients together

    Very Berry Smoothie

    Serves 1

    Ingredients

    ¼ cup blackberries
    ¼ cup raspberries
    ¼ cup red-currants
    1 tsp chia seeds
    Optional Banana (I love using banana in a smoothie as it makes it thicker)
    Oat milk (I use Oatly)

    Blend all the ingredients together and you have a beautiful pink smoothie

    The perfect green smoothie

    Serves 1

    Ingredients

    ½ cup spinach & Kale
    1 Kiwi
    ½ cup mango
    1 tsp of flaxseeds (optional) I always put a superfood in my smoothie
    Almond Milk

    Blend all the ingredients together and you have your perfect green smoothie!

    Nutty Smoothie

    Serves 1

    Ingredients

    Handful of roasted almonds
    1 apple
    1 banana
    ½ tsp of peanut butter
    Almond Milk and ice

    Blend all the ingredients together and your ultimate nutty smoothie ready!

    Tropical Smoothie

    Serves 1

    Ingredients

    ½ cup Papaya
    ½ cup Mango
    ½ cup Melon
    Water
    1 tsp of organic Flaxseed & Sunflower seeds

    Whiz it all up in a blender and you have your lip-smacking tropical smoothie

    Ruby red smoothie

    Serves 1

    Ingredients

    ½ Beetroot
    ½ cup chopped carrots
    ½ cup Ripened Peaches
    1 tsp of Milled Seed Mix (consists of Flax, Sunflower, Pumpkin, sesame & Goji Berries)
    Water

    Blend all the ingredients together and you have a gorgeous red smoothie

    Blueberry overload smoothie

    Serve 1

    Ingredients

    1 cup Blueberries
    1 Banana
    1 tsp Chia seeds
    Oat Milk

    Blend all the ingredients together and you will have a stunning purple looking drink

    Description

    Tiramisu

    Preparation Time: 20 minutes

    Serves: 4

    Ingredients

    1. 250 gms of Italian Mascarpone cheese
    2. 250 ml of double cream
    3. 1 tsp vanilla essence
    4. 2 tbsp caster sugar
    5. 2 cups of coffee (completely cool)
    6. 20 ml of rum
    7. 200 gms of lady fingers (sponge fingers)
    8. 1 egg yolk

    Preparation

    Whisk the double cream and sugar in a bowl and keep it in the fridge

    In a large bowl, whisk the mascarpone cheese, vanilla essence and the egg yolk until the mixture is light and fluffy (like buttercream). Now carefully fold the double cream with the mascarpone mixture.

    For the layering

    In a shallow bowl,add the rum in the coffee. Dip one sponge finger at a time until it’s nicely soaked and line the bottom of a square dish. Once the bottom is covered with the sponge fingers, layer 1/2 the mascarpone mixture so the sponge fingers are evenly covered. Repeat with another layer of sponge fingers and the remaining mascarpone mixture. Dust with cocoa powder.

    Cover with a cling film and let it set in the fridge for approximately 4-6 hours and serve

  • Rainbow Salad

    Description

    Rainbow Salad

    Preparation Time: 20 minutes

    Serves: 2-4

    Ingredients

    For the Salad

    1. 2 grated cooked beetroots
    2. 4 purple radishes (sliced)
    3. 2 grated carrots
    4. 1/2 cup cooked sweetcorn
    5. 1 large grated cucumber
    6. 2 small yellow & red tomatoes
    7. 1/2 cup grilled halloumi

    For the dressing

    1. Olive oil
    2. One lemon juice
    3. Sumac salt (optional) – you can use normal salt

    Preparation

    On a flat dinner plate or tray start by putting beetroot in a “c” shape as shown in the picture followed by carrots, sweetcorn, cucumber, tomatoes and halluomi. In the end, put the purple radish in between carrots and beetroot stacking one after another as shown in the picture.

    For the dressing

    In a bowl, mix the olive oil, lemon and sumac together and pour over the salad

  • Egg White Omelette with red pepper & onion

    Egg White Omelette with Red Pepper & Onion 

    Preparation Time: 10 minutes

    Serves: 1

    A healthy, post workout dish or a light dinner.

    Ingredients

    1. One medium sized red onion, finely chopped
    2. 1/2 Red pepper
    3. 1/2 tsp oregano
    4. Salt to taste
    5. 2 Large Egg Whites

    Preparation

    In a bowl, separate the egg whites, add salt & oregano and whisk until frothy

    In a pan, fry the onion and pepper until lightly brown on a medium heat, add the egg white, cook for 20 seconds until you feel its cooked. Gently turn from one side and fold the omelette.

    Description

    Masala Chai

    Preparation Time: 5 minutes

    Serves: 4

    Ingredients

    1. 4 cups of boiling water
    2. 2 cloves
    3. 4 cardamoms
    4. 1 tbsp. of freshly grated ginger
    5. Milk according to preference
    6. 3 tsp. of loose-leaf black tea
    7. Sugar (Optional)

    Preparation

    • In a milk pan, add the water, cloves, cardamoms and ginger, let it boil for about 1 minute on low heat until you can smell the fragrance of the ingredients
    • Add the tea and let it boil for a minute on low heat
    • Add milk and sugar according to your preference

  • Ultimate Chocolate Cake

    Description

    Ravs Ultimate Chocolate Cake

    Preparation Time: 30 minutes or less

    Serves: 5-6

    Ingredients

    Sponge

    1. 175g unsalted butter, softened
    2. 175g caster sugar
    3. 3 eggs
    4. 125g self-raising flour
    5. 50g cocoa powder
    6. 1/4 tsp baking soda

    Ganache

    1. 25g unsalted butter
    2. 150ml double cream
    3. 1 tsp vanilla essence
    4. 2 tbsp of caster sugar
    5. 100g of Dark Chocolate (80-90%)

    Preparation

    For the sponge

    • Pre-heat the oven at 180 Celsius
    • In a large bowl combine the butter and sugar and mix until light and fluffy
    • Add the eggs and mix until combined properly
    • In a separate bowl, sift together baking powder, soda, cocoa powder and flour together and fold it into the butter mixture
    • Grease two 17 cms round tins and divide the mixture equally
    • Bake in the oven for 20-25 minutes. Insert a skewer or toothpick into the middle should come out clean, if not bake a little more
    • Leave the sponges to cool completely

    Ganache

    • Bring the 150ml double cream to boil
    • Add a tsp of vanilla essence and add 3 tbsp of sugar
    • Add the chocolate and keep mixing gently until smooth
    • Keep in the fridge for an hour until you get a fluffy, spreading consistency
    • Spread it on the smooth side of one sponge with a palette knife, put the other sponge on top and repeat. After that spread on the sides and keep it in the fridge for an hour or so.
    • Tip: When serving, warm for 20 seconds in the microwave and serve with vanilla ice cream!

  • Ever delicious Butter Chicken

    Description

    Butter Chicken

    Preparation Time: 1hr + 2hrs for marination

    Serves: 2-3

    Ingredients

    For the curry

    1. One large white onion, finely chopped
    2. 3 cloves (crushed)
    3. 4 green cardamoms (crushed)
    4. 4 whole black pepper (crushed)
    5. 1 tbsp of ginger and garlic paste
    6. 450gms of tinned chopped tomatoes
    7. 1 tbsp of fenugreek leaves (kasuri methi)
    8. 1 tbsp of coriander powder
    9. 1 and half tbsp red chilli powder
    10. 1 tbsp of garam masala
    11. 4-5 cashew nuts

    Marinate

    1. 3 tbsp of Greek Natural Yoghurt
    2. 500gms of boneless chicken breast or thighs (your preference)
    3. 1 tbsp of ginger and garlic paste

    Pre-preparation

    In a bowl, put the yoghurt, pinch of salt, ginger & garlic paste and chicken. Mix well and set aside for at least two hours or overnight

    Preparation

    • Pre-heat the oven to 200 degrees celsius
    • In a deep pan, heat a tbsp. of oil and put the ginger & garlic paste, whole black pepper, cloves and cardamom sauté for a minute, until they start to crackle and then put the onions.
    • Once the mixture has turned light brown, put the tinned tomatoes and sauté on a medium heat for 5 – 7 minutes
    • Add the garam masala, red chilli powder, coriander powder, salt and cashew nuts and mix well.
    • Rub the fenugreek leaves in your palms and add to the curry, now cover and let it cook for 10 minutes on medium heat
    • Meanwhile, put the marinated chicken in a baking tray and cook for 10 minutes on 180 degrees Celsius
    • After 10 minutes, turn off the flame and let the curry mixture cool
    • Put the mixture in a blender and blend until smooth
    • Add three tbsps. of butter into the same pan and add the mixture along with the chicken, cover and let it cook on a low heat for 20 minutes.
    • Optional – After 20 minutes add cream
    • Enjoy with Naan bread or Tandoori roti

    Guacomole

    Preparation Time: 10 minutes

    Serves: 4

    Ingredients

    1. 5 Ripened avocados
    2. 1 Red onion, finely chopped
    3. 1 green chilli (optional)
    4. 1 medium sized tomato (optional)
    5. Half lemon
    6. Half tbsp. of salt
    7. Half tbsp. of paprika
    8. Half tbsp. of freshly ground pepper
    9. 100 grams of fresh coriander, chopped with stems

    Preparation

    In a large bowl, peel the avocados and mash

    Put the onions, green chilli, lemon, salt, paprika and pepper and mix well

    Drizzle the lemon juice and coriander and give it a nice mix

    Serve with your favorite Nachos or crackers!

  • Cucumber Raita (Yoghurt)

    Description

    Cucumber Raita (Yoghurt)

    Preparation Time: 5-10 minutes

    Serves: 4

    Ingredients

    1. 500 gm Natural Greek style yoghurt
    2. 1 medium size cucumber
    3. 1 tspn Cumin seeds
    4. Salt to taste

    Pre-preparation

    1. Peel the cucumber and grate it in a big bowl. Sprinkle some salt and let the grated cucumber lose water. Squeeze the water out.
    2. Whisk the yoghurt or blend it in a blender into a smooth texture.

    Directions

    • Mix the cucumber with whisked yoghurt.
    • Add salt to taste
    • Take cumin seeds, heat them in a frying pan until they start turning dark brown.
    • Take a pestle and crush the cumin into fine powder.
    • Add cumin powder along with fresh black pepper into the yoghurt.
    • Mix well and your Raita is ready. Best when it is served cold!
    • Optional : Sprinkle some very finely chopped coriander leaves

  • Egg Curry

    Also known as “Anda” curry. A fast and high protein rich easy curry. This recipe is from North India and one of my easy favourites.

    Egg Curry

    Preparation time: 30 min

    Serves: 2

    Ingredients

    1. 2 chicken eggs
    2. 1 large red onion
    3. 1 big tomato
    4. 1 tspn of garlic paste
    5. 2-3 green chillies
    6. Fresh coriander leaves
    7. 1-2 Bay leaves
    8. 1 tspn cumin seeds
    9. 2-3 cloves
    10. 1 tspn of fenugreek leaves
    11. 1 tspn turmeric powder
    12. 2 tspn Coriander powder
    13. ½ tspn Red chilli powder (or to taste)
    14. Salt to taste
    15. 10 ml Fresh single cream or butter (optional)

    Directions

    Pre Preparation

    Take 200 ml of water and put it on heat. Once heated, add eggs and hard boil them for ten minutes. After they are boiled, peel them and keep them aside. Do not slice or cut them as yet !

    Peel and finely chop red onions

    Finely chop red vine tomatoes (use organic for best results)

    Chop and paste fresh garlic

    Chop fresh green coriander leaves

    Finely chop green chillies (as per your choice)

    Preparation

    Heat up the cooking pot and add cooking oil

    Add Bay leaf, cumin seeds and cloves. In just a few seconds cumin will start to pop

    Add garlic paste and sauté for one minute. Do not let the garlic burn.

    Add chopped onion and keep stirring till golden brown. Do not let the onion burn.

    Add chopped tomatoes and keep stirring until tomatoes mix well with the onion & garlic paste and most of the water is evaporated.

    Add fenugreek leaves to the mixture (heat the fenugreek leaves for 10 seconds on high heat and then powder them)

    Add coriander powder, salt to taste, red chilli powder, turmeric powder and finally Rav’s secret masala

    Keep stirring the curry paste for 8-10 minutes

    Add cream (can be replaced by butter) or nothing if you want to avoid

    Slice eggs into two halves and add them to the paste. Simmer on medium heat for 5 minutes

    Finally sprinkle chopped fresh coriander whilst still on fire and the dish is ready to serve

    Serve with fresh roti or chapatti or naan bread accompanied with onion or cucumber salad with salt & lemon dressing and any raita
